How well do you know your Highland distilleries? A question you can ponder while sipping this mysterious single malt from indie bottler North Star Spirits! Hailing from an undisclosed distillery, this one matured for 11 years in a selection of Port octaves, oloroso sherry octaves, and a refill hogshead. Vatted and bottled in 2022, a total of 265 bottles now join North Star's Cask Series 21.
Cooked orchard fruits, Black Forest gateaux, vanilla wafers, and a touch of dried hay.
The baked goods carry through with drizzles of icing sugar, vanilla custard, and buttercream, balanced by rich oak and dense baking spice.
A solid backbone of oily barley, dark berries, and leathery oak builds beneath.
