From Signatory's long-running Un-Chillfiltered Collection independent bottling range comes a 12 year old Mortlach single malt. This expression was distilled back in 2009 and matured in a pair of hogshead casks for a dozen years, before eventually being bottled up at 46% ABV in 2021 – of course, with no chill-filtration whatsoever.
Toasted brown sugar, cinnamon sticks, roasted almonds, a little hint of paprika.
Buttery at first, before more earthy spices build, with a smidge of honey along the way.
Toasted bread, vanilla, clove.
A very nice single malt, very similar to Aultmore. Nice pale colour. Very smooth.
