The much adored Noah's Mill bourbon here, made with a mash bill of 72% corn, 13% rye, and 15% barley. This expression is bottled at a very generous 57.2% ABV - a drop of water does help bring some of the rich fruity notes to the fore, while it's earthy, resinous depth ought to shine in an Old Fashioned.
Heavy treacle and vanilla, dusted with plenty of cinnamon. Notes of forest floor and earthy oak nestle beneath.
Ginger, black pepper, honey-drizzled sponge cake and cooked pear, with resinous oak and subtle hints of dried herbs.
Honey-roasted nuts, sharp green apple, another kick of pepper, and a touch of damp earth.

Amazing. Was initially worried it may be overpowering considering percentage. But far from. The taste is easily my best now. Was kentucky owl confiscated, but this trumps on smell initial taste and after taste. Truly stunning highly recommended. Even better with a Norlan glass and one rock.
I know some people have compared this to rowans creek but to my mind the extra money is well worth it. That extra 7% is not over powering and this bottle gives a pour that is still smooth and creamy unlike some of the other cask strength offering.
I have recently bought a bottle after lots of homework and careful study of reviews of Noahs Mill. I am reluctantly writing this as I'd prefer no one knows how good this bourbon is!! I'm buying another bottle immediately, and hope no one reads this. This bourbon is way above fine malts such as Macallan triple cask, far better than any other bourbon I've tried. On the nose almost toffee apple, taste, cinnamon and cardamom Followed by honey. Noahs Mill I doth my cap to thee, grade A
