Highland Park Between You and I came from a collaboration between superstar Björn Frantzén and the Orkeny distillery. He explored his personal tasting notes and what the whisky evokes for him to create a unique new single malt. It spent 16 years maturing in virgin Swedish oak (a first for Highland Park), sherry-seasoned European and American oak, and bourbon casks.
Warm oak spices, vanilla, floral, or delicate orchard-fruit undertones, and rich wood character from virgin Swedish oak.
Sweet honey, dried fruit, and toasted oak with a smooth but robust texture. Also, some whispers of Highland Park’s subtle peat/smoke (typical of Orkney) are balanced with the oak’s spiciness.
Long, lingering with oak spice, sweetness, maybe some smoky or maritime notes. Finish draws out wood tannins with a satisfying warmth
