Sherry
This single cask Glenallachie was distilled in September 2007, and spent the next 12 years ageing in a first-fill sherry butt. Eventually, in June 2020, Signatory decided it was time to bottle it up for its Cask Strength Collection, with 580 bottles released at a generous 64.8% ABV. Lots of sherried Speyside deliciousness to be found here!
Orange curd, stewed apple and lots of candied ginger, with some oily nuts making an appearance.
Cigar box and cherry jam, with oaky vanilla, praline and more spice.
A spicy finish with cinnamon, black pepper and fruitcake.
