Signatory Vintage has carved out a reputation for bottling some of Scotland’s most distinctive single casks, and this 30-year-old Fettercairn shows exactly why. Distilled back in 1995 and matured for three decades in a single hogshead, it was finally bottled in 2025 at a commanding 58.5% ABV, with only 223 bottles released.
Honeyed mango, dried pineapple, and baked orchard fruit glide in first, followed by polished oak, warm brioche, and a little beeswax. Hints of toasted coconut and citrus peel add lift.
Rich, elegant, and layered. Stewed apricot, vanilla cream, and golden syrup mingle with sandalwood, ginger, and soft leather.
Lingering tropical fruit, orange blossom, seasoned oak, and a final wisp of warming spice.
