This single malt from Craigellachie spent 11 years maturing and was treated to a finish in a custom-made oloroso sherry octave, thanks to the gang at indie bottler Darkness. Octave casks are nice and little, ensuring plenty of interaction between the spirit and wood, and thus in this case, plenty of fruity, nutty oloroso influence.
Soft, juicy peaches and apricots, toasted marzipan, vanilla custard, burnt brown sugar.
Stone fruits and vanilla cream open the way for candied almonds and roasted walnuts before woody notes of cinnamon sticks and liquorice arrive.
Dark, treacly toffee, warming nutmeg, anise.
