Bristol's Circumstance distillery has been up and running since 2018, and here we have its first single grain rye whisky! Distilled from a core of 51% malted rye and 49% malted barley which had been fermented on mead yeast, the whisky then spent over three years resting in a combo of bourbon, new European oak, and oloroso sherry-conditioned casks.
Floral honey, orchard blossom, and cinnamon sugar lead the way, with some savoury rye spice beneath.
Green apples lead, things stay floral with notes of honeyed baklava, backed by sultanas and buttered pumpernickel.
Toasted oak and vanilla back up warming ginger and peppercorn spice.
