A cracking cask strength single malt from Caol Ila, released by independent bottler Wilson & Morgan to celebrate its 30th anniversary! Distilled in 2009, the whisky spent a dozen years maturing, including a finish in ex-Pedro Ximénez sherry casks, before being bottled up at cask strength in 2022. With layers of meaty peat smoke and woody spice, it's a fab expression from the Islay distillery.
Thick waves of smoke and barbecued meat, with earthy oak and candied orange.
Woody anise and a touch of bitter oak are softened by citrus oil and distant dried fruit while drying peat smoke takes hold.
Wafts of vegetal charred herbs, intense smoke, and leathery cedar, with prickles of liquorice and black pepper.
