Created by the talented team at Barrell Craft Spirits in Kentucky, Seagrass is a blend of American and Canadian rye whiskeys, treated to a most intriguing array of finishes in Martinique Rhum, Madeira, and apricot brandy barrels. This expression was created to highlight the grassy, herbaceous notes that rye whiskey offers, coupled with the richness and spice imparted by different finishing barrels. Produced in batches, blended to taste, and bottled at cask strength. The folks at Barrell Craft Spirits advise that a portion of the proceeds from the sale of this whiskey are donated to The Ocean Foundation, contributing to the conservation and restoration of seagrass.
High concentrations of bright, fruity esters lend a perfume-like character to the aroma. Honeydew melon and plum sit alongside a slice of ripe apricot resting out in the sun. The underlying rye is revealed by a sea-like salinity, tarragon, and elderflower.
Sweet and juicy, Seagrass opens on pear, lychee, and white grapefruit. Classic rye flavours of cinnamon, rosemary, fennel seed, and rosehip aren’t far behind. Unctuous texture and sandy tannin are complemented by a delicate astringency so common to Canadian whiskeys.
Fresh and clean, but the persistent tannin and astringency focus the powerful burst of camphor, chalk dust, and scorched earth.

This is phenomenal. Loads of tropical fruits, really complex, could sip this for hours and not get bored.
