This reposado Tequila is made by a team of female staff, headed up by Melly Barajas at her small distillery in Valle De Guadalupe, Jalisco. Produced from highland agave grown to full maturity (typically between eight and 10 years), steam-cooked in earthen ovens, naturally fermented in open vats, then twice distilled, the Tequila then spends six months resting in reused American whiskey barrels sourced from Jack Daniel's and Balcones. The barrels are used many times over, so while the spirit mellows and develops a softer texture, the oak impact is less than you find in many reposados. Nice bottle too! Blown from 100% recycled glass in Mexico City. The makers recommend enjoying this straight up, paired with a nice cold Mexican lager or pilsner.
Sweet, delicately vegetal and herbaceous agave shines through, with a soft, rounded texture and elegant finish.
