
Brought to us by the adventurous gang at The Heart Cut, this experimental malt hails from the creative folk at California's St. George distillery, and it was made by distilling beer! The team started off with a heavily hopped Californian IPA made from 100% malted barley and infused with sage – it's due to the added hops and sage at this stage that the final spirit is not permitted to be labelled as 'whisky' by EU regulations. The beer was then distilled before maturing in a fourth-fill cask that had previously held bourbon, reposado Tequila, and Californian ale, imparting a whole array of exciting flavours and complexities upon its new contents. The Heart Cut recommend enjoying this big, characterful malt alongside something light, breezy, and sessionable like a low-strength pale ale.
