They are working with Mexican families and farmers to produce incredible quality spirits, refusing to fiddle with traditional recipes. This expression is an Aguardiente made from fresh cane by Edgar Gonzales in Oaxaca, double distilled in copper. The simple, no-nonsense approach has been translated to their packaging, with plain apothecary-style bottles.
Clean and ever so slightly saline, with rich and slightly bitter olive juice.
