A lovely sweet Pedro Ximénez from Sanchez Romate. This is made by drying the grapes on esparto grass mats for 1 1/2 to 3 weeks. This increases the sugar concentration. Cardenal Cisneros is aged for over 15 years in oak casks and it's delicious as a digestif!
