The 2023 edition of Tio Pepe Fino En Rama from renowned sherry producer, Gonzales Byass. This superb unfiltered and unclarified sherry was selected from 96 butts during the spring when the flor (the protective layer of yeast that forms over the liquid during the aging process) was most active. Lots of cooked apple on the nose, touch of Granny Smith green apple too, bread and Marmite. Very fresh and tangy, really tingly in the mouth, and then tangy and rich. Salted almonds on the finish.
