
Tres Palmas hails from Gonzales Byass' Tio Pepe solera, and was released as part of the annual Palmas series from the producer. The range aims to showcase older sherry, with the 10 year old Fino drawn from barrels which, even after such a lengthy ageing process, have still managed to retain a think veil of flor. This makes for a super complex and full bodied sherry, which makes a great pairing with rich game dishes.
Creamy, with almond oil and a slightly herbal touch. Roasted nuts develop, with notes of apple skin and citrus leading into salted butter on the finish.
