It's That Boutique-y Rum Company's first bottling of rum from the Zuidam Distillery in The Netherlands! Made with imported molasses (sugarcane doesn't grow in The Netherlands), this has gone through a long fermentation with multiple strains of yeast, and it was double distilled in pot stills before being filled in Pedro Ximénez casks, where it rested for four years. There's quite a lot going on with the rather dramatic label, but it's good to see Patrick van Zuidam has kept his clothes from the Millstone That Boutique-y Whisky Company labels...
Cinnamon, cardamom and peppermint, with layers of brown sugar and tangy rhubarb.
Still has plenty of cooking spice character to it, though now tropical fruit notes come to the fore.
Oaky tannins, cinnamon gum, candied pineapple, and orange peel.
