
This is the second edition to join the spectacular annual Single Estate rum series from Mount Gay. The rum is produced entirely with sugar cane grown on the Mount Gay Estate in St. Lucy, Barbados, which was planted intentionally to make molasses for rum production, rather than for sugar production. This second edition is made with molasses produced from the 2018 cane harvest, fermented with the estate's propriety yeast for a generous nine days (compared to Mount Gay's standard four days), which resulted in a secondary fermentation, providing vibrant and distinctive layers of tropical fruits such as pineapple and guava. The rum is 100% pot distilled, and spent five years ageing in American oak bourbon casks before bottling. A superbly special sipping rum here, the folks at Mount Gay suggest pairing with duck magret or Italian bresaola, lobsters and oysters, or even characterful cheeses like stilton or roquefort.
