
Kentish rum? What fresh madness is this? Working from one of the country's smallest distilleries just up the road from MoM Towers, Will Edge is something of a spirits Womble - making good use of the things that he finds, the things that most everyday folk leave behind. In this case, by-products from sugar refining ie. molasses. After fermentation, the boozy liquid is distilled in a column still to create a very smooth fruity rum - no harsh edges here. It's aged for 6-10 months in ex-bourbon barrels to smooth it further, to give it some spice and to impart that beautiful golden colour.
Vanilla at first then floral with a distinct whiff of honey
Spicy, peppery, very very smooth, lovely round smooth texture
Notes of vanilla raisin on the (fairly short) finish
It's a very versatile rum, as happy being sipped neat with ice or used in a cocktail such as a Daiquiri.

This is a pleasant and different rum. Not as sweet as most and almost whisky like. Very light in colour. I may be wrong but I think it's all British sugar. Also travels upstairs a little quicker than most! I'm glad I tried it.
