The team from Discarded Spirits specialises is using ingredients that would otherwise go to waste to create lip-smacking spirits, like its Banana Peel Rum! It features a base of Caribbean rum which has been matured in whiskey casks, but then it's infused with banana peels for two weeks to impart a whole load of fruity, estery deliciousness. The banana peels come from a flavour house which uses the fruit, but not the peels, so they would normally not have a use. Discarded Spirits has given those peels a use, and the result is marvellous.
Banana bread and treacle toffee, with notes of dried fruit, baking spice and butterscotch.
Really impressed with this rum. It's in a lot of pubs now if you want to try it. But if you get a bottle, you won't be disappointed.
This is excellent. Bananas and caramel. There are so many ideas for this rum other than drinking it. I personally think it would be amazing in a banana bread or even to use to flombay. In a desert sauce would also be great. What ever you use it for, I think for the price it’s a fantastic easy to drink rum with bags of flavour.
Half way through my second bottle now. Tastes like being on a beach. Good neat on ice, or with a splash of coke.
I like rum.. I like bananas.. this was an excellent choice because it has both in sackfulls.. lovely rum hit with a big blast of banana..beautiful stuff. I drank it on the rocks but it would definitely bean outstanding mixer in a cocktail..highly recommended ??
Interesting idea, to use banana skins for additional flavour. Indeed this is the very essence of super-ripe banana, the natural flavour not a nasty artificial flavour. However, the novelty wears off pretty quickly and this rum triggers headaches in me like few other drinks. Very sweet and cloying. Probably best for making desserts with.
