It's the second batch of fantastic Guyanese rum from the Diamond Distillery and its wooden Versailles still bottled by That Boutique-y Rum Company! This one was allowed to age for 16 years, developing a wonderfully rich flavour profile of spice, fruit and vanilla. Yes, the still is wooden, which sounds ridiculous (like a chocolate teapot or a glass hammer), but the proof is in the pudding. Or rum. You could enjoy it as pudding, if you like.
Batch 2 is a release of 578 bottles.
Creosote, tobacco, stem ginger and a hint of raspberry are balanced by some sweeter notes of vanilla and dark berries.
Black fruits, green apple and smokier notes of charcoal emerge through zesty oak spice, then leather and toffee treacle with just a touch of pineapple to add a little sweetness.
Long and spicy with a lot of complexity.
This is a fantastic rum. I'm not yet very familiar with rum tastings but had tried the 14 year old and was introduced to a whole new world of flavour and complexity that I didn't know rum could have. This one is even better. It's quite expensive, but an excellent drink.
