Don Atenogenes and his family create Pensador Mezcal in his fields near Miahuatlan, Oaxaca, using traditional methods which remain largely unchanged since the 16th Century. They use a combination of espadín and madre-cuishe agave to create it - these are popular agave varieties for good reasons. The process from harvest to bottle each batch of Pensador takes two months - with the hand bottling and labelling taking it closer to three.
Oak-y smoke, roasted apricot, black pepper and a mineral-rich earthiness supported by citrus and grape.
I'd heard a lot of good stuff about mezcal before i tried it. Articles in the guardian and ft, saw rick steins road to mexico. I had very high expectations but i struggled to find a brand which worked for me. A lot of the bottles i tried we're so big on smoke that they had this chemical, petrol flavour which really didn't work for me. A friend put me on to Pensador and I've finally found my mezcal. The smoke is still there but its softer and just one part of the picture. Stone fruits, aromatics, and a round-ness which makes me think of aged spirits. A sensational liquid. Nice bottle as well
I first tried mezcal in mexico last summer and since then I've worked my way through a lot of the brands which are available in the UK. Pensador is the one I keep coming back to. Smoother than most but also complex and with just the right intensity. Really moreish stuff
No wow factor. Clean, well made, generic, not too idiosyncratic, smooth, fresh. High quality but not memorable.
On my third bottle so thought I should review. Really is excellent stuff!
