The Crossbill folks up in Scotland have created their very own Pineapple Gin Liqueur, made by combining their gin with pineapple (obviously), ginger and thyme, then barrel-ageing the mixture in casks that previously held Pedro Ximenéz Sherry. Ought to be excellent over ice, or enjoyed with tropical fruit juices...
Juicy and sweet, with a light hint of salinity coming from the juniper and thyme.

Very disappointing. Very weak pineapple flavour.
Nice balance of gin, pineapple and aging.
Bought to share with family but nothing left, all gone, the bottle is empty. Would like to give this 10 stars, but 5 is the maximum.
