Eggnog cocktail recipe

Eggnog Cocktail

Prep

45 mins

Serves

6-8 people

Ingredients

150ml Brandy (you can use rum too)

800ml Whole milk

200ml (1/3 pint) Whipping cream

3 Egg yolks

75g Golden caster sugar

2 Cinnamon sticks, plus extra to garnish

1 Vanilla pod (or 1tsp vanilla extract)

Method

Step 1

Whisk together your sugar and egg yolks until well combined. Then split the vanilla pod and scrape the seeds before adding it (or the extract) and the cinnamon sticks to a saucepan filled with milk. Place over medium-low heat and bring to the boil. Once the hot milk mix is ready, pour it over your egg and sugar mix and whisk well. Clean out the pan ready to be used again, then pour the new milky-eggy-sweet mix in place over a low medium heat. Stir constantly until thickened slightly then remove from the heat and stir in the brandy.

Step 2

Set aside to cool for approximately 20-25 minutes and then chill for at least 3 hours. Once it’s cool you can whisk the cream and fold it into the mixture. Your eggnog is complete! To serve, pour the eggnog into glasses filled with ice and decorate each one with a cinnamon stick. You can also sprinkle each with a little ground cinnamon or a grating of fresh nutmeg.
