
From French spirit specialists Audemus comes a very intriguing expression – Umami Oak Finished Gin. This spirit has been made using a Sicilian caper distillate as well as an infusion of Parmigiano-Reggiano Italian parmesan cheese, along with juniper and two more botanicals. Following that, it's rested in an ex-Cognac cask for several months before bottling. Intriguingly savoury, as you would expect from the name, which refers to our fifth "basic taste".
Definitely savoury, but not in-your-face salty. A whisper of citrus sweetness brings some balance, along with hints of vanilla and the classic juniper bite.

This makes a cracking Gibson. I used this to try and recreate the Hawksmoor Pink Gibson and it worked really well.

I wanted to love this. It was something different and usually I like the more 'out there' ideas. Not this one. Whilst it is drinkable (just), it is in your face caper-y, as though the jar has been emptied into the bottle. That is the dominant and only flavour I can get. No cask, no juniper, just caper. Not one to keep, I think.
