Welcome to The Lowlands

The Lowlands were always defined as being home to Scotland’s most delicate and approachable whisky styles, known for their light, floral, and grassy character. 


But in recent years, the region has been home to a wave of exciting new producers, from the barley-forward Lochlea, the cask-creatives at Glasgow Distillery, and InchDairnie’s take on Scottish rye whisky.


At the heart of this region stands Bonnington, the first single malt distillery in Leith for nearly a century and the home of Crabbie whisky as well as the newly released Bonnington range.


Turning Crabbie’s legacy into today’s story

John Crabbie & Co. have traded in wine and spirits since 1801, building a far-reaching business from Leith that sourced, produced, and exported across the world as the British Empire expanded. 


That history feeds directly into Bonnington Distillery, founded in 2017 on Graham Street in Leith, close to the original John Crabbie site. Beginning production in 2020, Bonnington is the first single malt distillery in Leith for nearly a century. With capacity for around 2,200 casks a year, production choices are deliberately considered, from bespoke squat neck stills inspired by Crabbie’s 1860s designs to water drawn from a deep local aquifer. 


Access to peated and unpeated malt, alongside a growing library of cask types, sets the distillery up for an experimental and forward-looking future.

Tasting notes

Nose

Sweet, fresh stone fruits, prunes, and a touch of citrus zest.

Palate

Sticky toffee pudding, honeyed dates, runny caramel, and tannic oak.

Finish

Rich oak and toasty cinder toffee linger.

Leith is a district with whisky in its bones and salt in the air. These releases draw on that heritage while keeping both feet planted firmly in the present. Peated malt, new oak, and wine casks bring depth, colour, and perspective. The common thread is clarity of flavour.

Named for the grandson of John Crabbie, this Lowland single malt is balanced and sweet without being soft. Around 75% bourbon barrels lay down a classic vanilla and orchard fruit base. A further 15% virgin American oak adds spice and creaminess, while 10% red wine casks lend a subtle berry lift.

Crabbie & Cree Blended Scotch honours a partnership that stretches back to 1825, when William Cree and John Crabbie bought a spirits business together under the name Crabbie & Cree, long before John Crabbie & Co. took shape. This modern blend leans 80% grain whisky and 20% single malt from Bonnington distillery, creating a lighter, sweeter style.
