A Williams pear eau de vie from Austria's Reisetbauer Distillery, which uses 12.2 kg of the fruit to make 1 litre of spirit. The pears are allowed to ripen a little bit further after picking, and then they're mashed, fermented, and given a gentle distillation to show off their full flavour profile in the spirit.
Delicate pear sweetness, with a touch of flinty minerals along the way.
