Lundin Distilling, located in Fife, was founded to create original, high-quality spirits. They began with a still from Alabama, USA, known for moonshining. Their challenge was to add something local and sustainable to their gin. They chose gorse, a wildflower that grows in the area. It has a bright yellow colour and rich aroma, symbolising the Scottish summer.
Their "Gorse Coastal Gin" shows their dedication to quality and innovation. Made in Fife, this gin blends 18 botanicals. These include two types of juniper. Added to this are: elderflower, chamomile, caraway, grapefruit, bitter orange, cinnamon, and Fife gorse. The gin starts with a juniper taste, then a sherbet note. Gorse adds flavours of bison grass and honey. It then turns into fruity flavours like apple, pear, and mango. The aftertaste has dark chocolate, bitter orange, and white pepper. First released in December 2016, it's distilled using the rectified grain-neutral spirit method.
The "Ripple Gin" was Lundin's next creation. It took many tries to get its unique taste. It has a strong juniper essence, with strawberries and raspberries added after distillation. Lighter than the Gorse Gin, the Ripple Gin uses more floral botanicals instead of traditional spices. Distilled using the rectified grain-neutral spirit method, it was first sold in June 2019.
