Le Soula winery is in the Fenouillèdes region, in the French Pyrenees. It is known for organic and biodynamic viticulture. Roy Richards, an English merchant, and Gérard Gauby, a local winemaker, founded it in the 1990s. They wanted to use the ancient, high-altitude land to make wines that reflect the region.
The vineyards are 350 to 600 metres high. This height and the mountain air are good for the vines. The soil is granitic and gneiss. Some vines are over 80 years old. This adds depth to their wines.
Le Soula focuses on organic and biodynamic farming. They do not use chemical fertilisers, herbicides, or pesticides. They use natural methods, lunar rhythms, and respect for the land. This approach takes work but ensures high-quality grapes and pure wines.
The winery uses minimal intervention in winemaking. They ferment with natural yeasts and limit sulphites. The wines age in vats and barrels. This keeps the fruit's character and the vintage's traits. Their wines are vibrant, mineral-driven, and complex.
Le Soula's red and white wines are praised for their elegance and depth. They show the Fenouillèdes terroir well. The wines age well, becoming more complex over time.
