Mexican Tequila

Tequila, a spirit synonymous with the vibrancy and culture of Mexico, boasts a rich history and a deeply rooted tradition in the art of distillation. Originating from the Jalisco region, tequila has transcended beyond its local heritage to become a globally celebrated liquor notorious for its robust and dynamic flavour profile.

Made from the blue agave plant, tequila's production is carefully regulated to ensure adherence to strict guidelines, including its geographical indication, which stipulates that it can only be produced in certain areas of Mexico, predominantly in Jalisco, but also in some municipalities in Guanajuato, Michoacán, Nayarit, and Tamaulipas. The adherence to the strict appellation of origin regulations ensures that the quality, production methods, and reputation of tequila are meticulously maintained.

The making of tequila is both an art and a science, bridging tradition with modern distillation techniques. Harvesters, known as “jimadores,” skillfully harvest the “piña,” the heart of the blue agave, removing the leaves to reveal the core, which is then cooked, traditionally in stone ovens or more contemporary autoclaves. The sugars are extracted, fermented, and then distilled, typically twice, to produce tequila.

Diversity within tequila is noted through its various classifications: Blanco (unaged), Reposado (aged between two months and up to a year), Añejo (aged between one and three years), and Extra Añejo (aged for over three years). Each classification brings forth unique flavours, from the crisp and pure notes of Blanco through to the complex and richly nuanced profile of Extra Añejo, which has absorbed characteristics from the wooden barrels during ageing.

Tequila's influence on popular culture cannot be ignored. From being an essential component in cocktails like Margaritas and Tequila Sunrises, to featuring in popular music and film, tequila maintains a lively and festive image. This spirit symbolises celebration and has often been associated with communal gatherings and revelry.
