
Gospel Green cidermakers in Hampshire produce some lovely vintages. This rosé version from the 2017 is made with a mixture of cooking and dessert apples with the pink hue coming from a small amount of pinot noir wine added. It gets its fizz from the same method used to make champagne - bottle fermentation followed by long ageing so that it has picked up lots of rich toasty flavours.
