An excellent Calvados from Château de Sassy, made with its very own cider as the base. The cider itself has been aged, before being distilled and matured for at least six years, initially in small barrels before being moved over to much larger casks. The Calvados is moved to different barrels twice a year, which helps to oxygenate the spirit, a process that the producer says can help create a smoother mouth feel.
Cooked apple, freshly baked pear tart, caramel, sandalwood.

This is the nicest calvados I have yet tried. Rich, fruity and really smooth. Will be back for more!
Just as you would have expected from an XO, concentrated, smooth and very tasty.
