Master of Cocktails Spiced Pear Whiskey Sour

Right then ladies and gents. Trust everyone’s recovered sufficiently after NYE? Time for this week’s #MasterofCocktails. This week we’re making a super-delicious Whiskey-Sour Variant recipe, which I have simply dubbed the Spiced Pear Whiskey Sour. We’ll be using the St. George Spiced Pear Liqueur for this one. It really is god’s own stuff, made using Pear Brandy, Pear Juice, and spices. Top, top marks St George Spirits.

I’m pairing (pearing? Sorry. Sorry) it with Woodford Reserve Kentucky Bourbon for its perfume. I think this works well with the spice.

You’ll be needing these…

So – to start, we’re going to crack out 50ml of the Woodford Reserve. Into a stirring glass…

…Along with a handful of ice.

Next up, 20ml of the Spiced Pear Liqueur:

Followed by 10ml Fresh Lemon Juice.

Finally, a couple of shakes of Angostura bitters for depth. You could add egg-white for body, but I don’t think it’s needed here.

Shake shake, stir stir…

Before we pour – garnishes… It doesn’t really *need* one, but I had some dehydrated pear slices in the cupboard…

So I’ve covered the top of each slice with sugar syrup, and a dusting of caster sugar & cinnamon:

To serve, we’re going to strain into a chilled coupette glass…

Express a twist of lemon over the top, and discard…

Then finally clip one of those pear slices to the outside of the glass.

And serve. For the name, we’re keeping it simple – The Spiced Pear Whiskey Sour. That.

Hi Will, Many thanks for the comment – always great to hear back from people and I'll be the first to admit that there's always more I can learn 🙂 'Master of Malt' is the name of the retail website (and by default the blog), but make no mistake – I'm not a professional barman – just a keen Sunday-night amateur (in addition to my 'day job' of being one of the team behind MoM, and many of the brands we create and represent). WRT your comment about shaking citrus – I'm not convinced you're right about mixing the juice properly. I'd imagine that even a very cursory stir would lead to very thorough dispersion of the ingredients. Is there another process you've got in mind that shaking adds? Or to phrase that another way, have I misunderstood your intended meaning of the word 'mixing'? FWIW – I think I get the overall feel of what you're saying here, and looking back on this post stirring intrinsically 'feels' wrong – I probably should have shaken it, but I'd like to understand the reason that I feel that way (and the reason that you clearly do too). Maybe I'll do a side-by-side and see which version I prefer…

I normally don't call out people on blogs like this, cause I assume that they're just enthusiasts and there's nothing wrong in the name of enthusiasm. But since you call your blog the "master of malt" I presume that you consider yourself a pro – that's kind of what Master means in most circles. So, about this drink… Why in the name of god are you STIRRING a sour? Or anything with citrus in it? Without a good hard icy shake, you're not going to mix the juice properly. There may be a drink or two with both citrus an a fragile ingredient that you wouldn't want to bruise, but this isn't one of them. Shake your citrus, stir your booze.
