Days of Creation is the second iteration of a project Thornbridge have been working on for a number of years, one to create a modern sour ale, aged in barrels, that possessed the depth and range of flavour featured in its favourite sours from the USA offered.
To achieve this, the Derbyshire brand brewed using a Belgian yeast strain, before maturation took place in Burgundy barrels with raspberries for well over a year. Cultures of Brettanomyces, Pediococcus and Lactobacillus were then added at set points to sour the beers gradually over time.
The resulting brew won silver in the World Beer Cup Awards 2016, so I think it's fair to say the project has succeeded.
