Here we have White Batavia Arrack from By The Dutch! Pot distilled from sugar cane molasses on Java after a slow fermentation with wild yeast. Despite its colour, the spirit is aged for between eight and 12 months in old, large teak wooden vats, before it's then blended in Amsterdam. There are heaps of cocktails to be made with this unique spirits, though we rather like the sound of an Arrack Sour.
Bright and tropical, with papaya and citrus blossom alongside fresh sugar cane notes. Warming black pepper appears, with a touch of vegetal bell pepper balanced by vanilla on the finish.
