White dog, also known as moonshine, is America's version of Scotland's "Malt spirit" or "New Make". This is just unaged whiskey, made in the style of the very early distillers, and, of course, the bootleggers and moonshiners, who had neither time nor means to age their... spirit. There has been something of a resurgence for white dog recently, owing in no small part to America's craft brewing and distilling movement.
