It's the first batch of single malt Irish whisky from Waterford made using grain from Sheestown grown on a single farm by Phillip O'Brien. The Single Farm Origin series explores the impact that terroir can have on a whisky, using barley grown on single farms around Ireland. Not simply fascination, they're also very tasty expressions, which is wonderful. This particular whisky was aged in a combo of first-fill American oak casks, virgin oak casks, premium French oak casks and casks that were used to age vin doux naturel previously!
Honeyed barley, fresh quince and apple, with a slight hint of festive spice growing.
Melon, Seville orange and another spicy touch of crushed clove.
Lingering baking spices and butterscotch.
Possibly the best Irish I’ve had the privilege to experience in a very long time. 6/5
