It's the second release of Waterford's Gaia single malt, which is made with organic barley from a selection of Irish growers. We've been loving the expressions from Waterford, and really enjoying seeing how much attention the distillers are paying to the barley that goes into the spirit. It clearly takes a lot of extra effort, but the proof is in the pudding. Or whisky, in this case.
Soft hints of rhubarb and red berry sweetness, with touches of popcorn and floral breeze alongside.
Toasted almond, flaky pastry, vanilla pod, citrus peels, a good crack of peppery heat.
Strawberry tart, with a dollop of vanilla ice cream.
