This Speyside single malt underwent a 120-hour fermentation and slow distillation, before being matured for 12 years and finished in bespoke 400-litre French virgin oak casks from Tonnellerie Quintessence. These casks use a mist toasting technique designed to gently open the wood and dial up complexity without overdoing it. Spey Brume Dorée was bottled at a cask strength of 57.6% ABV.
Vanilla, toffee, demerara sugar, cardamom, gingerbread, cranberry jam.
Oily and smooth with stewed apple and beautifully integrated new oak.
Long and robust with liquorice and a soft oolong tea note.
