Sheep Dip's delicious Oloroso Sherry Cask was specially created by Richard Paterson who aged it in bourbon hogsheads before having the whisky shipped to Spain to mature in Oloroso sherry casks for nine years. It hasn't spent all of its maturation in Scotland and thus, under SWA rules, can't technically be called a Scotch whisky. It is, however, very rich and full of flavour.
Caramel, vanilla, hot caramel popcorn covered in butter, some maraschino cherry, light brown sugar and toffee brittle.
Crème anglais, vanilla pods in caster sugar, mild, rounded sherry spice and more toffee. In case you hadn't noticed, this is a sweet whisky.
More sweetness, but the finish is a touch peppery with some cinnamon.
Very sweet, very drinkable. One for after dinner, or perhaps with a medium-bodied cigar.

tasted it at Maltstock. very nice whisky indeed. Just a little expensive compared to the normal sheep dip. But then again, it will be a one time only,I guess...
I'm a big fan of the whiskies produced by Spencerfield Spirits and this is an excellent dram. Has a lovely chocolatey and caramel flavour and ideal to have without adding water, with dessert or after dinner. Very smooth and a one-off that won't be replicated again. I normally drink Islay whisky but this is the complete opposite and i'm pleased I tried it.
