Seaweed & Aeons & Digging & Fire aaaand... Sauternes Cask Finish! Well, there's an exciting twist to one of our favourites. Hailing from an undisclosed Islay distillery, this edition of the smoke (and ampersand) laden single malt spent 12 years maturing, including a finish in a single sauternes dessert wine cask, which has imparted some fascinating sweet fruit notes to the roasty, peaty malt at its core.
Juicy, ripe yellow plums and stone fruits leap from the glass, with grilled apricots and burnt biscuits leading to cooked pears and toasted almonds. Ashen peat, coastal bonfire, and a whiff of warm tarmac nestle beneath.
Savoury notes of cream crackers and briny salinity open the way for pickled plums and salted peanut brittle before juicy, sweet sultanas and stroopwafels join in time. Waves of vanilla, tangy pressed raspberry, and dense peat smoke ride throughout.
A hearty dose of earthy, sweet smoke and a gentle crackle of pepper linger alongside rich, chewy oak, a hint of hibiscus, and burnt toffee.
