This expression from the immensely popular Redbreast range shows off what happens when yummy single pot still Irish whiskey gets finished in Pedro Ximénez casks. The answer? Deliciousness happens. Released as part of the Iberian Series, inspired by Redbreast's connection to some of the top cooperages and winemakers from the Iberian Peninsula. The whiskey is initially aged in bourbon and Oloroso sherry casks, before being moved over to Pedro Ximénez casks to finish for at least 12 months – plenty of time to impart a wealth of terrific sherried elements.
Quite chocolatey at first, but soon enough, buoyant notes of berries appear. Layers of nutty barley and toasty festive spices underneath.
Richly honeyed, with hints of brown sugar and toffee, before another helping of blackcurrant and raisin appears. A smidge of orange oil zestiness too.
Dark chocolate returns on the finish, with some drying cinnamon and nutmeg.
