Isle of Raasay Dùn Cana - Sherry Quarter Cask (Third Edition)
The Isle of Raasay Distillery presents the September 2025 release of the third edition of its Dùn Cana Sherry Quarter Cask single malt. Named after the island’s flat-topped volcanic landmark, this whisky combines peated and unpeated Raasay spirit (50/50) distilled from Laureate and Diablo barley with MW yeast, fermented over three and five days, and drawn from a narrow cut point.
After initial maturation in first-fill ex-rye American oak casks sourced from Woodford Reserve, Peerless, and Wild Turkey, it underwent a second maturation in oloroso and Pedro Ximénez quarter casks from Bodega José y Miguel Martín. Bottled at 52% ABV, natural colour, and non-chill filtered, it represents the distillery’s signature style of subtle peat, vibrant fruit, and sherry-driven depth. A total of 14,300 bottles were produced.
Tasting Note by The Chaps at Master of Malt
Nose
Dried figs and raisins mingle with treacle tart, nutmeg, and spiced orange peel, backed by sweet smoke and toasted almond. A touch of leather and damp oak emerges with time.
Palate
Rich layers of sherry-soaked fruitcake, dark chocolate, and espresso, balanced by earthy smoke and rye spice from the first maturation. Notes of honeycomb, blackberries, and salted caramel shine through.
Finish
Long and warming, with embers of peat smoke, clove, roasted coffee beans, and a final sweep of Pedro Ximénez sweetness.
