Israeli whisky from the Pelter Distillery here. Each batch of its five-year-old single malt is aged initially in first-fill Jim Beam bourbon barrels. The whisky is then split into two parcels to mature in different casks, Cognac casks from Otard and Pelter's own brandy casks for a further year before marrying and bottling.
Candied orange, leather, gingerbread, vanilla fudge, floral honey, and crushed almonds.
Dark chocolate, roasted coffee, prune, cinnamon, and heaps of orchard fruit.
Rich and sweet.
