
Rugby union player Darren Cave and Sean Muldoon, owner of Dead Rabbit in New York City, have teamed up to create Outwalker Irish whiskey. Also enlisting the expertise of mixologist Jillian Vose, the team has created a blend of Irish whiskey made at the Great Nothern Distillery. This includes pot still whiskey aged in oloroso sherry casks, single malt aged in white Burgundy casks, grain whiskey aged in virgin American oak, and grain aged in rye casks.
Right away you should be getting sweetness – notes of butterscotch, apricot, vanilla, and a hint of cinnamon. Nice. Right?
On the tongue, yes, there’s that classic Irish whiskey maltiness, with pronounced notes of vanilla and fruit – juicy mango and pineapple – and a trace of toffee sweetness coming through.
Outwalker takes its time, so the finish is long and warm. Look for hints of chocolate, leather, and oak, and a lingering tingling spiciness.

I know it was a cocktail whiskey so we planned to use it for a few highballs and whiskey sours at home - which even my tequila loving wife enjoyed. But as as sipping whiskey I loved it. Complex notes right through the glass but that pot still and single malt combination was superb.
