
Nc’nean’s Huntress series has always championed the weird and wonderful, and Lemon Meadow takes it further with a yeast strain borrowed from Champagne production. Fermentation fanatics, this one’s for you.
Nc'nean Huntress 2025 - Lemon Meadow was fermented using classic yeast strains, Anchor and Fermentis, plus the French sparkling wine yeast, before the whisky was aged for five years in a cask mix of STR red wine (56%), bourbon (42%), and a splash of oloroso sherry (2%). It was bottled with no chill-filtration or colouring, and the single malt is certified organic as always from Nc'nean.
The nose opens with lemon peel, honeysuckle, and soft green herbs. Shortbread and clotted cream follow, with a dusting of chamomile and hay.
Zesty citrus curd, vanilla sponge, and tart white grapes, balanced by a leafy dryness and a touch of spice.
Lemon verbena, toasted oats, and floral honey.
