For this release of the Dair Ghaelach collection from Midleton Distillery, the single pot still Irish whiskey has been matured initially in American oak bourbon barrels before finishing in Irish oak hogsheads. The whiskey here is from batch 1, and the Irish oak has been sourced from Knockrath Forest, from tree number 5 in fact! A smashing whiskey, especially for those exploring terroir. It's been bottled at cask strength, and without chill filtration.
Delicately balanced allspice and cinnamon, alongside ripe orchard fruits.
Plenty of baking spices, with a touch of green peppercorns, oak influence, and drizzles of caramel.
The tannins linger, along with poached apples, and peppery spice.
