25 year old single malt Scotch whisky from the Macduff distillery, bottled by us as part of our Single Cask Series collection. Back in May 1990, this whisky was distilled and filled into a Sherry cask. 25 years later, in August 2015, we bottled it at 55% ABV without even a thought of chill-filtering it or adding artificial colouring.
Mouthwatering stuff here. Loads of stewed apple and fresh chocolate-chip cookie wafts. A little hint of Christmas cake and cane sugar (which develops a subtle grassiness - a bit rhum agricole-like).
Dark chocolate, old oak and nutmeg. Honey-roasted cashew notes give balance to sweeter hints of chocolate-covered raisins. Apple slices return on the mid-palate.
Waxy red liquorice, black pepper and a touch of blackcurrant jam.

This was a stupendous cask - the type you really rarely see these days. There's a massive reek of pipe-tobacco, as well as a sturdy backbone of rancio-rich sherry. I can see how it might be mistaken for 'overold', but in truth this is just an incredible concentration that's derived from extended maturation in a really, really good (not over-oaked) cask.
I felt this had spent a bit too long in the cask - it is VERY bitter and dry. I was going to write it off as a miss but then I added a good lug of water and let it sit for a while. Then the sweetness comes out and a much more rounded finish develops. Definitely one for the more experienced drinker, but when it gives up its secrets it aint a bad dram.
