The third chapter in Lindores Abbey’s homage to the original monk of Scotch whisky, this congregation is no quiet sermon. This bold, cask strength single malt was matured in a trio of casks – bourbon, Amontillado and Pedro Ximénez sherry – before being reunited in sherry butts to find harmony.
Ripe orchard fruit – baked apple and pear in golden syrup – rise first, wrapped in thick ribbons of vanilla and honey. Treacle tart and marzipan follow, with flashes of toasted almonds and dusty cinnamon. As it opens, layers of orange oil, milk chocolate, and a drizzle of PX richness emerge, alongside a faint leathery dryness from the Amontillado cask influence.
Caramel and sticky toffee pudding lead, quickly joined by rum-soaked raisins, roasted hazelnuts, and dark syrup. There's a backbone of baking spice – clove, nutmeg, and warming cinnamon – threaded with touches of dark chocolate, espresso grounds, and dried fig. A pleasing nuttiness builds alongside a sweet oak presence and gentle tannin grip.
Fruitcake and candied citrus peel are followed by cocoa-dusted almonds and a final wave of chocolate fudge.
Light copper in colour. Nose: Stiff honey, vanilla, stewed caramelised apple, cinnamon, even a hint of roasted nuts. Water brings out a cereal note and more fruitiness. Taste: Rich honey, sultanas, hard toffee, roasted nuts, spice and chilli flakes. Finish: Short to medium, sweet and spicy. This is good stuff!
