Here is the 2023 release from Kilchoman of its Sherry Cask Matured whisky, this time exclusively matured in Pedro Ximénez (PX) sherry casks. It was bottled at 50% ABV and you can expect lots of dark and sweet fruit, creamy nutty notes, and aromatic spice to interplay with the coastal Islay smoke.
Dried fruit, earthy smoke, orange peel, dark chocolate, and hazelnut.
Salted caramel, marmalade, sultanas, cinnamon, and coffee.
Long, sweet, and rich.

Lots of good things going on here. A classically salty, peaty, iodine Islay, bolstered by a sweet PX middle. But, it is a 5 year old and you can still taste that in the slightly tack-bright finish. I understand the idea of Sherry hogsheads reaching maturity faster than other casks, and this does have complex flavours to offer. There’s good experimentation like this with modern Islays, and that’s to be applauded. But that price - £85 is a lot for a 5 year old tang. Even PX doesn’t fix that.
